As you may or may not know, I’m on day 20 of my Sugar-Free September Recipe Challenge where I share sugar-free recipe versions of yummy foods everyday while also eating no sugar all month.

When I do a sugar free cleanse/challenge, I like to extremely limit refined carbs as they can viciously spike your blood sugar levels. BUT, I do allow myself a sugar-free treat day each week in which larger portions of refined carbs aren’t extremely of limits to me, and on this day I like to enjoy some sugar-free comfort food - usually in the form of pasta.

My favorite go-to is my Comforting Creamy 3-Cheese Pasta w/ Garlic, Olive Oil and Chili Flakes which is the exact recipe I'm sharing today!

This pasta is seriously restaurant quality!

Why go to a restaurant and spend top dollar for a ‘quality pasta’, when you can just make a top quality delicious plate of pasta at home, with a way cheaper price tag! AND you’ll know exactly what ingredients you’re eating.

Some restaurants even add sugar to their so called top quality cheese sauces and many store-bought cheesy sauces contain tons of added sugar - and even corn-syrup..., yes they add sugar to a cream sauce, what does it even need that for?!

My Creamy 3-Cheese Pasta w/ Garlic, Olive Oil and Chili Flakes, is sugar free, made from pure ingredients, fresh flavors, and tastes like a delightful plate of comfort. The red pepper chili flakes and add a tangy flavor without overpowering anything.

I use a combination of asiago, parmesan, and romano which gives the sauce a flavourful cheesy taste, and the cream cheese provides that creamy mouthful flavour we all love. The olive oil establishes a rich depth to the food and finally, who doesn’t love a bit of garlic in their pasta?

The aroma when I cook this dish is crazy good!

Though, the craziest thing about this pasta is the silly name that we use when referring to it in my household: Spadino pasta.

You’re going to be laughing your head off when I tell you the story behind the creation of this scrumptious recipe.

If you’re a regular reader of my blog, then you know that I'm constantly blabbing on about my Netflix (and occasionally Hulu) binging habits. I love to snuggle on the couch with my older family members, have snacks and binge on fun TV shows especially during a holiday weekend.

Two years ago during New Years weekend, my family members and I found a show that we got addicted to watching called Netflix’s Suburra (do you ever find yourself getting so involved in a show that you talk to the TV, thinking a character will hear you?!)

In this show there’s a character with the nickname Spadino, and in season one he made a pasta with chili flakes, olive and garlic. Long story short one of my brothers became desperate to have this pasta in reals and begged me to try it out - of course eventually he convinced me. BUT, (and there’s always a but) on the day I planned to cook this pasta, before I made it he asked if it could be creamy (because why not?) with the same flavors in the show.

So I expanded on the chili, garlic and olive oil concept and created this very recipe. Now in my house Spadino Pasta, after the character who inspired the dish.

Comforting Creamy 3-Cheese Pasta w/ Garlic, Olive Oil and Chili Flakes (Sugar-Free)

Comforting Creamy 3-Cheese Pasta w/ Garlic, Olive Oil and Chili Flakes (Sugar-Free)

Servings: 6

INGREDIENTS:

  • 3 cups milk (I use skim, but whole is fine), room temp

  • 1/2 stick butter, room temp

  • 1/4 cup olive oil

  • 1 head garlic, minced

  • 4 ounces cream cheese, room temp

  • 2 tsp red pepper chili flakes (or to taste)

  • 3 cups shredded Italian cheese (I use a blend of asiago, parmesan, and romano from BelGioioso)

  • salt, pepper, to taste

  • 1 box angel hair pasta

HOW TO MAKE IT:

  1. Fill a large pot with water and add 2 tsp salt. Place on back hob of stove and bring to a boil on high heat.

  2. In a medium saucepan, heat oil and butter until butter is melted over medium heat. Add chili flakes and garlic, and cook until fragrant, about 2 mins.

  3. Pour in milk, and whisk until milk is hot and steaming. Add cream cheese a whisk until completely combined. Add cheese and whisk constantly until all of the cheese is melted. Season with salt and pepper, adding more chili flakes if desired. Sauce should be hot and thick. Reduce heat to low.

  4. Add pasta to boiling water and cook according to package directions.

  5. Sieve the pasta, and pour into creamy sauce. Use kitchen tongs to coat completely, and serve hot.
