Sugar-Free Chocolate Halloween Cutout Cookies (Vegan, Diabetes-Friendly)

Halloween is on its way, and what better Spooktacular way to celebrate than by making these super fudgy, soft, and chewy chocolate banana cookies! They are 100% sugar-free and vegan! As their natural sweetness is provided by simply banana and stevia extract (which also helps to prevent a cakey texture), you can eat your boo-ti-ful cookies and stay healthy too! Also, you can go ahead and make the sweet rich cream cheese topping (using vegan cream cheese if needed) to whip up some scary sweet designs!

Halloween is a super fun, autumnal, spook-tacular holiday which I love to celebrate all month long in October.

Although there is always a little problem I come across every year, one of Halloween’s main themes and traditions is CANDY and TREATS - tons and tons of candy and treats. I do love to join in on this sweet tradition, but I have to be very wary. Celebratory spooky treats all month is way too much sugar, right?!

I mean processed sugar has no dietary requirement at all, and constant excessive amounts of all higher glycemic foods like sugar and refined carbs can be SERIOUSLY unhealthy for your entire body and mind.

Also effects of constant sugar intake can make us feel awful with lethargy, headaches and even flu, ruining party fun!

This of course doesn't mean we can’t enjoy some candy during this spooky month, I'm just saying we have got to pace ourselves.

That is why I had to make one of my favorite treat traditions, which I love to do all the time during holiday months - making sugar free seasonally decorated cookies!

I have a total passion for blasting the Ghostbusters theme song through my kitchen radio, while decorating cookies with my younger siblings and I've designed my cookie recipe so I can eat them, dance and celebrate whenever I want, with no sugary side effects! And they’re delicious!

Yep, you guessed it… they’re healthy and sugar free chocolate cookies!

Totally sugar free!

About a year ago I created an ultimate HEALTHY, NO-SUGAR cookie, and I've now adapted it to be Halloween-decoration friendly, with my yummy sugar free royal icing.

The cookie is shapeable and soft, fudgy, chewy, and so wonderfully delicious that you'd never be able to tell it was healthy. 

These angel-like flavorful, soft, chewy chocolate banana cookies, are vegan and totally sugar free, meaning they’re okay for diabetics and low sugar eaters!

And… guess what? You can have the recipe and bake it up today!!

Although the banana is for sweetness, it’s still a real dream team combo with that banana and chocolate flavor packing a wonderfully rich, soft taste, truly decadent taste.

These sugar free rich chocolaty flavored cookies are quick and easy to whip together, and are made with everyday common ingredients you have right now.

Plus, they bake up in around 20 minutes and without an electric mixer.

After you cook them up all you have to do is wait for them to cool down and then whip up the sugar free royal icing, add your coloring and it’s deco time; pumpkins, leaves, boos, gravestones the decorations possibilities never end!

Plus, you don’t have to worry if you have kids about any nasty ingredients or sugar rushes!

You can make these cookies with both butter and coconut oil, but I prefer coconut oil (which what I’m sharing)!!

If you want to get creative and jazz things up, there are plenty of versions to test:

  • Add unsweetened dark chocolate chunks

  • Add dried cherries, pistachios or my personal fave hazelnuts

These healthy Halloween Cookies are vegan, chocolaty and sugar-free, and most importantly decadent and delicious!

Sugar-Free Chocolate Halloween Cutout Cookies (Sugar-Free, Vegan)

Servings: 10

INGREDIENTS:

  • 3/4 cup whole-wheat flour
  • 1/4 tsp salt
  • 2 tbsp unsweetened cocoa powder
  • 1/4 tsp baking soda
  • 1 small very ripe banana, mashed
  • 1 tsp vanilla stevia drops
  • 2 tbsp melted butter (or melted coconut oil, for vegans)
  • 1/4 cup unsweetened chocolate chips
  • 8 oz cream cheese, cubed, soft
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoon stevia drops

HOW TO MAKE IT:

  1. In a medium mixing bowl, sift together flour, cocoa, baking soda, and salt.
  2. In a separate similar sized bowl, stir together banana, coconut oil or butter, and stevia. Pour into the flour mixture, and mix until just combined. Stir in chocolate chips and chill for 20 minutes.
  3. Heat your oven to 325F, and line a large baking sheet with parchment paper. Remove the chilled cookie dough from the fridge, and drop large spoonfuls onto the prepared baking sheet, making about 6 large cookies. Use the back of the spoon to flatten the cookies slightly.
  4. Bake for 10 to 15 mins - the more your cook them them less fudgy they'll be. Remove from oven, and let cool before eating.
  5. For the frosting: Combine soft cream cheese, vanilla, and stevia. Using an electric hand whisk or mixer, whisk on a low speed until the frosting is uniform and then increase to medium until completely smooth and fluffy, about 2 minutes, scraping the sides of the bowl with a rubber spatula as needed. Use a piping bag with a thin tip to decorate your cookies.
